Maple Pemeal Bacon Roast

Ingredients:

  • 1 (3 1/2 lb) pemeal bacon (roast)
  • 1/2 cup maple syrup
  • 2 tablespoons dijon mustard
  • 2 teaspoons chopped fresh rosemary
  • 1 teaspoon pepper
  • 1/4 teaspoon sea salt

Directions:

  1. Preheat oven to 350F/180°C.
  2. Cut six 1-inch slits across roast.
  3. Place a cooling rack on a large rimmed baking sheet lined with foil. Place bacon on rack.
  4. Combine maple syrup, Dijon mustard, rosemary, salt and pepper. Brush with basting mixture.
  5. Bake in centre of oven for 25 – 30 minutes and baste with remaining mixture.
  6. Bake for 50 - 60 minutes, or until a thermometer registers 130F/55°C.
  7. Let rest for 5 minutes before slicing.
